Hello! I need to send a summary email automatically that summarizes the values that are added to a form (via shortcode). I have managed to get the email to be sent automatically, but since the trigger is the new entry creation, the email is sent many times a day. How can I make it send only once a day? Ideally the email would have to be activated using the system time, in order to always send it at the same time.

You need the Form Action Automation add-on: https://formidableforms.com/knowledgebase/schedule-autoresponder/. This runs off of WP Cron, so timing can be iffy if your site doesn't get a lot of visitors. If you want accuracy when sending emails, create a custom PHP function that can run through the server's cron function.
