Outcomes look fine on a desktop or mobile display but not in the emails sent to participants (HTML or PDF). Any suggestions on how to make the emails more reader-friendly?

You can always display a custom view in an email or create your own HTML and CSS to design exactly to your vision.

I don't see any tutorial for creating a custom email view with outcome quiz results and form data. The outcome page displays are fine but the email reformats them when it shou;d keep them as they are.
