Is there any way to edit a CPT from JetEngine with formidable forms instead of the JetFormBuilder or the forms legacy from JetEngine?

Probably not. Formidable works very well with CPT's as long as it creates the CPT from a form entry. Form entries and CPTs are linked by record IDs. There would be no link for Formidable to access the CPT if it was created by JetEngine.
