In the Field colours settings in the Formidable Forms Styles section.
Then I can see why it's happening :). I suggest creating your own style in the Before Fields section of Settings -> Customize HTML that changes the font color. In theory that won't be picked up by the notification email. Another way around it is to change the HTML in the notification email to override the font color.
Both suggestions involve fundamental CSS and aren't Formidable issues, so there's no documentation per se. The only thing I can add is that for the second suggestion, you can go into the email notification action, delete the [default-message] shortcode in the Message section, click the ... in the bottom right of the Message section, click the Advanced tab and choose Default HTML. This will fill the window with the HTML that is generated for the message and you can add your CSS there. The downside of this is that if you add/remove fields from your form, you'll have to manually update the HTML.
