I am setting up a form for a client that is hosted on my website. How can I change to their PayPal email for this form, for deposits, so I do not have to pass from my account to theirs and end up with double fees?

Change the email in Formidable->Global Settings->PayPal

I just realized that that might not be the answer you're looking for. Do you mean you want to change the email address only for your client's form and keep it as is for your forms?
