In the Advanced view concepts is an example to make a view by a field. That requires a filter: ‘FIELD is unique’.
I can only select ‘FIELD unique (get oldest)’ or ,FIELD (get newest)’. Where do I find the required one to see all entries?

That is the required one to see all entries. If you follow the knowledgebase instructions, the shortcode will return all unique records for whatever value your header field displays.
