We create around 50 forms per year and while duplicating an existing form and making slight adjustments saves time, creating views for users and coding the html email is very time consuming. Is there anyone out there that has custom plugin additions that automate or extend the functionality of formidable forms? Or, could potentially create one to help automate some of the tasks?

Anything is possible. You're going to have to write up a pretty detailed work-flow so that we might understand the business need.
