I only see options for left-align and right-align

you can use css to target the field label and do what you want with it.

Yup. Just as Walter said:

Use the browser's code inspector, select the field label you want, note it's CSS ID, and use custom CSS in Global Settings:

#my_field_label {text-align: center !important;}
