We would like to use the Pro version to accept a registrations for an event and then have a printable ticket emailed to the registrant after payment is completed through PayPal.  Has anyone accomplished this, specifically, the printable ticket part?

Yes this can be done.  Create an email action that sends the entry as a pdf upon the completion of the payment.  Or design an html ticket in the email body and send it instead of the pdf.
